Herby Omelettes & Sriracha Mayonnaise Toast

Eggs on toast... a new way! A great quick breakfast option or when you just can't be stuffed making a hefty dinner (apparently termed 'brinner,' as in breakfast for dinner!?).

Ingredients:

  • 2 slices of your favourite bread

  • 2.5 tablespoons of mayonnaise

  • Hot sauce (I used Sriracha)

  • 2 eggs

  • Milk

  • Herbs, chopped (I like basil and coriander, but you can really use whatever you have handy).

  • Butter

  • Grated cheese

Method:

Toast bread.

Mix mayonnaise and desired amount of hot sauce in a small bowl until smooth. Taste test at this step, so you get a mayonnaise mixture that is spicy enough to your liking.

Whisk eggs. Add a dash of milk and whisk some more until combined. Add chopped herbs and whisk again until combined.

Heat pan on a medium/low heat. Add enough butter to coat the pan evenly. You should hear a sizzle and bubbling on the pan. This is how you know it is hot enough to add the egg mixture.

Pour egg mixture onto the pan slowly, and wait until just cooked through. Add some grated cheese to one half of the omelette. Fold one side of the omelette on top of the other to create a half moon shape.

Wait until the cheese melts inside the omelette. Cut the omelette in half, so that there is a piece for each slice of toast.

Lather toast pieces in hot sauce mayonnaise and place omelettes on top.

Season with salt and pepper (and some chilli flakes if you like some extra spice!)
