Raspberry Chia Jam
A three ingredient jam… say whaaaaaat? Spread it on your pancakes, toast, in your scones, where ever you like.
Ingredients
Raspberries (frozen)
Chia Seeds
Superfine sugar
Method
You will need 1 tsp of chia seeds for every 40g of raspberries you have. Weigh your raspberries & work out how many teaspoons of chia seeds you’ll need(eg. 400g raspberries / 40g = 10tsp chia seeds).
In a large bowl, place raspberries and chia seeds. Set aside and let defrost. As the raspberries defrost, they hydrate the chia seeds and plump them up, which creates a nice jammy consistency.
Crush with a fork & mix around occasionally.
Taste & add some sugar to taste, if you prefer it to be sweeter.
Store in a glass jar in the fridge.
