Creamy Winter Porridge

As the weather cools here in Brisbane, there’s nothing better than snuggling up with a bowl of porridge and a cup of coffee on a winter’s morning. Super creamy (and not at all stodgy or flavourless) and warming, this too will become a winter favourite of yours.

Ingredients

1/2 cup rolled oats

1 tbsp chia seeds

1 tsp ground cinnamon

1 tsp vanilla essence

1/2 tsp salt

1 cup milk (cow’s or nut milk - up to you)

1/2 cup water

Potential toppings:

Raspberries, peanut butter, maple syrup, cinnamon & honeycomb

Chopped banana, cinnamon, honey & nut butter

Chopped nuts, berries, nut butter & honey

Stewed fruit

Method

Place all ingredients in a saucepan over a medium heat & stir.

Let the porridge bubble away, on a steady simmer, for about 8-10 minutes, ensuring that it doesn’t burn to the bottom. Turn down the heat if you think it’s cooking too aggressively. Stir often to ensure a creamy texture.

The rolled oats should not be ‘bitey’ when cooked through & the texture should be creamy and thick. You can add a splash more milk/water if you think the texture is too thick, or you prefer a slightly looser consistency.

Top with you favourite fruits, nuts/seeds, honey/maple syrup & nut butter.
