Basil Hommus

I’m combining one of my all time favourite snack foods, hommus, with the classic herb basil. I love keeping this handy in the fridge for when that 3pm hunger strike hits, or to showcase in a cheese platter. The best part is that it is all ready in under 10 minutes.

Ingredients

  • 400g tin chickpeas, drained

  • Large handful fresh basil

  • 2 garlic cloves, finely sliced/crushed

  • Juice of 1/2 lemon

  • 150ml olive oil

  • Salt & pepper to taste

Method

  1. In food processor, combine chickpeas, basil, garlic and lemon juice. Blitz until combined. You may need to pause, and scrape down the sides every so often.

  2. Gradually pour in the olive oil whilst blitzing. The hommus should start to get creamy and smooth.

  3. Season to taste with salt and pepper and blitz once more to combine.

  4. Refrigerate until serving.
